We are seeking a highly skilled and creative Pastry Chef to join our culinary team at a leading beach resort in Lekki. The ideal candidate will oversee all aspects of the pastry sectionfrom menu design and preparation to staff supervision and quality control. This role requires innovation, technical excellence, and the ability to perform under pressure in a fast-paced, service-driven environment. The successful candidate will create an exceptional range of pastries, desserts, and baked goods that meet the resorts high standards of quality, taste, and presentation.
1. Menu Development & Planning
Design, plan, and update dessert and pastry menus, including daily and seasonal specials.
Introduce innovative recipes and visually appealing desserts aligned with the resorts brand and clientele.
Collaborate with the Executive Chef on menu costings, recipes, and presentation standards.
2. Production & Baking
Prepare and bake a wide variety of pastries, cakes, breads, and desserts.
Ensure consistent product quality, taste, texture, and appearance.
Create specialty desserts for restaurants, bars, and guest events.
Decorate pastries and plated desserts with creativity and precision.
3. Quality Control
Conduct regular checks to ensure all baked goods meet the resorts standards for freshness, flavor, and aesthetics.
Monitor oven temperatures, baking times, and ingredient proportions to maintain consistency.
Implement quality assurance measures to guarantee guest satisfaction.
4. Inventory & Cost Management
Manage stock of ingredients, baking supplies, and packaging materials.
Monitor inventory usage and minimize waste through proper forecasting and portion control.
Liaise with procurement and stores to ensure timely availability of materials.
5. Hygiene, Sanitation & Safety
Enforce strict compliance with food safety and hygiene regulations.
Maintain cleanliness and organization of the pastry kitchen, workstations, and storage areas.
Supervise waste management and proper equipment maintenance.
Adhere to all safety protocols when handling ovens, mixers, and other kitchen appliances.
6. Staff Management & Training
Supervise, train, and schedule pastry team members to ensure efficiency and high standards.
Mentor junior bakers and interns to develop technical and creative skills.
Conduct performance evaluations and encourage a culture of teamwork and professionalism.
7. Event & Special Function Support
Design and execute custom dessert menus for weddings, banquets, private dinners, and beach events.
Collaborate with event planners and chefs to deliver unique dessert experiences.
Ensure timely preparation and flawless execution during large-scale events.
8. Equipment & Maintenance
Ensure all pastry equipment (mixers, ovens, refrigerators, etc.) is properly used and maintained.
Report repair and maintenance needs promptly to management.
9. Reporting & Administration
Maintain daily production logs and cost sheets.
Report consumption, wastage, and procurement needs to the Executive Chef.
Participate in kitchen meetings and contribute to operational improvements.
Minimum of HND / Diploma in Culinary Arts, Food Technology, or a related field.
Minimum of 5 years proven experience as a Pastry Chef in a reputable hotel, resort, or fine dining establishment.
Proficiency in preparing local and international desserts, including cakes, tarts, mousses, breads, and plated sweets.
Strong understanding of professional pastry techniques, ingredients, and flavor pairings.
Excellent organizational, time management, and leadership skills.
Strong creativity and innovation in recipe development and food presentation.
Excellent communication and interpersonal abilities.
Ability to work effectively under pressure and meet tight deadlines.
Physical stamina to work long hours in a demanding kitchen environment.
Certification in Food Safety and Hygiene (an added advantage).
Passion for pastry and artistic presentation.
Attention to detail and commitment to excellence.
Ability to train and inspire junior pastry staff.
Strong sense of responsibility, discipline, and teamwork.
Flexibility to work early mornings and extended hours when required.
Monthly Salary: 300,000 - 350,000
